So I just got back from the farm with the Turkey

Getting the brine going now. Last year we slow smoked it and it was the best turkey I've ever had. Going to do the same this year. What's everybody else doing?

2. Deep fry, baby!

I plan to deep fry two 12 lb. turkeys: one for the crowd of about 18 people who will be here for Thanksgiving dinner, and the other one that's just for me for later. I figure one turkey will be enough for this crowd because there will also be a big ham and a whole grilled salmon.

In addition, I bought a turkey that's already smoked. I got it for just $2.41 a lb. I'm going to save it for later, maybe around Christmas.

I've never brined a turkey or anything else, but I'm thinking about trying it. From your experience, what does that do for you?

10. The brine

Will give you the most moist turkey you've ever had. It really makes a noticeable difference. Think the best flavor you've ever had on steroids.

I've lost my taste for turkey..!!..So I always look for the smallest cheapest one I can find at the market, just to please mama..This year, I found one at Wallyworld for $5.65...

6. I remember that clip....my nanny used to ring the neck of chickens for Sunday dinner

and I had to help prepare the bird, so stuff like that, while unsavory, I can stomach, but it is gross.

On dove hunts. Teach a kid to pop the heads off doves around seven and they'll be hunters for life.

They were less than tactful. I wanted lightly frozen, so he tells me:

"We ran out of lightly frozen, so we killed a shitload more for yunz on Sunday. Everybody's gettin' fresh this year, but we ain't chargin' more."

5. My mom smokes the turkey. I make the dressing and all the veggies...

Her turkey is usually pretty good. I want to deep fry one, one day, but I am a little intimidated by that. Too many stories of people burning stuff down.

15. We got a deep fryer for our wedding in June

So far I've only made corn on the cob in it. It has this ridiculous regulator that shuts off every 15 minutes, so until I can figure out how to eliminate that, it's of little use to me.

I've brined for twenty years now. I always use a fresh bird and then smoke or roast depending on the time pressure of the day's events.

14. You need to tell them

The turkey is the centerpiece of the day, and therefore is of paramount importance. Everybody works around me.

That way you can just tell everyone you can't leave the smoker alone and just concentrate on drinking beer!

16. Well, we got thoroughly empty-nested this year

Son and DIL got transferred and since his very busiest time of the year starts the day after Thanksgiving, and he's NEVER off then until well after Christmas, we bought a turkey breast.

But I'm thinkin' -- hell, we shoulda just decided to eat out!! With that in mind, I might vote for going out for good ole Chinese for Christmas.
