Whatcha eatin'?

I just cut up a big sweet potato and am going to roast it with onions and apples, and have it with a balsamic reduction sauce and chopped walnuts. Flour tortillas on the side and iced tea.

I was going to have nectarines for dessert but discovered earlier that they were bland and tasteless. So no dessert...

6. Can't go wrong w/ flour tortillas & cold nonsweet iced tea !

Had corn tortillas w/ black refried beans last night. Fry in heavy skillet w/ Kerrygold Butter.

Easy & delish.

Not as delish though as baked sweet potatos w/ walnuts & brown sugar ! YUMMY !

Tomorrow I conquer slow-cooker corned beef brisket & fingerling potatos ...



Note: Been on FUJI Apple Binge lately, they're cheap this year. Perfect for office lunch ...

7. Last munchies

were around 9 PM or so. Roasted cashews spritzed with some olive oil and sprinkled with a bit of sea salt.

Am about to give the doggies their bedtime snack...a raw peeled carrot for each. Keeps their teeth nice and scrubbed.

9. I need to start giving mine carrots.

We are way overdue for a teeth cleaning. My boy's surgery took top priority though. We'll see the dentist in April.

I use cashews to make sour cream, or a reasonable facsimile!

8. Hoping Beautiful Stems is doing ok.

Leftover cold turkey and some tortilla chips. And an orange.

Been working on cleaning out my big chest freezer for the last month or so, and that got rushed and finalized this week due to needing it for almost 500 lbs of beef.

Had to cook two turkeys but got most of everything else in the smaller refrigerator freezer or back into the big one. Only had to throw out a few things from the glacier. That was kind of surprising, I was expecting a big pile of yuck.
