We brewed an absurd amount of beer yesterday, and I don't even drink that much

A cigar club I am associated with all kicked in last year for a 55 gallon barrel of Knob Creek Bourbon. Well they kicked it before I became ill and during my recovery I was "volunteered" to brew up enough ale to fill the barrel and age. Basically a Bourbon Barrel Ale. Well we did that yesterday. Five turkey fryers in the back yard each doing two batches of wort. I'm interested in the final product. Considering we are going to age it for 6 months in the barrel I have yet to decide how to carbonate it and whether to bottle or keg it.

Couple to sterilize, couple to fill, couple to cap...

I'd use a bottling yeast after that long an aging!

The yeast will be long dead by then. I'll have to bring the beer back to life some way.

If this comes off (and you know it better, I've got $500 sunk into this) they'll expect another, because they have a new keg!

I need a break to get back to making bitters and genever.
